Appellation - Champagne Method Cider (Extra Brut) - 2021

A Sparkling, Dry Champagne Method Fine Cider. Our very English alternative to grower Champagne, with apples as our grapes. The unique geology of the Exe valley is at the forefront of this celebratory, bright, vibrant cider, where prominent Sandstone minerality and salinity are complimented by a complex nose of apple skin, honey and beeswax.

2021 is our most refined Appellation to date, with half of the blend spending 3 months in 300L fifth-fill French oak barrels. This time just bringing a little roundness to the palate without dampening the celebratory vibrancy we love.

Each of our Champagne Method Fine Ciders are made from a field blend of apples from unsprayed traditional Devon orchards. Varieties are chosen for their bright, fresh acidity, alongside a handful of sweet Devon cider apples to smooth & round. These undergo a spontaneous primary fermentation before secondary fermentation with champagne yeast and a further two plus years maturation on the lees in the bottle before being hand riddled and disgorged, with a 2.4g/l dosage.

Best enjoyed well chilled, from a flute or tulip. The perfect accompaniment to shellfish, particularly Devon crab and lobster, mussels and oysters. Also pairs very well with spicy foods and mature, clothbound cheddar.

All of our English Fine Ciders are made with just apples handpicked from the traditional Devon orchards we manage for both fruit and biodiversity in the Exe Valley. Here diverse wild flowers and grasses flourish below the trees, grazed by our flock of Shropshire sheep or an orchard owner’s calves.
