


Champagne Method Cider (Brut) - Oak - 2018
A Sparkling Dry Champagne Method Fine Cider. Only 72 bottles produced. A hint of Oak and extended aging on Champagne lees has given this rich, intense Sparkling Fine Cider structure, length and vivacity. Think the caramelised butter and burnt sugar aromas of a creme brulée, with a hint of prunes, baked apple and cinnamon spice.
Each of our Champagne Method Fine Ciders are made from a field blend of apples from unsprayed traditional Devon orchards. Varieties are chosen for their bright, fresh acidity, alongside a handful of sweet Devon cider apples to smooth & round. Here, a long, slow wild primary fermentation was followed by 6 months maturation in French Oak, before secondary fermentation and maturation on Champagne yeast for 3-4 years. Each bottle was then hand riddled & disgorged with the addition of 11g/l brut dosage.
A rich indulgence. Serve lightly chilled in a flute or tulip, alongside your favourite smoked cheese.
